Picadillo is a dish made with rich ground beef, tomatoes, olives and raisins. It is sometimes used as a filling for tamales, tacos and empanadas, and at times people eat it alone. Birria is another dish made possibly with beef, veal, lamb, pork as it is quite versatile and usually combining more than one type of meat is not unusual. Cooked in a large casserole dish for four hours gives the best flavor. Be prepared as this dish takes a total of 28 hours from preparation to completion. Chile Colorado  is a flavorful red stew with rich chunks of tender beef. It is an ultimate comfort food served with fresh flour tortillas. Guajillo, New Mexico or California dried red chiles are rehydrated and ground into a paste. The other spices include dried oregano, garlic. This dish is amazing due to the simmering of the beef for about three whole hours. Imagine those fork tender beef in beef broth, tomato sauce, seasoning and chili paste. The unique way to rehydrate the dried chiles is to pick wholesome chiles and shake out the seeds before heating and roasting them for a while. Then blending it with some water to achieve a finished puree.

Menudo

The authentic Menudo is a New Year’s morning dish that has medicinal qualities. So after a big celebration, it’s great to help you out from your hangovers. Its main ingredients are pigs feet, honeycomb tripe, onions, poblano and ancho chiles, dried hominy, peppercorns and oregano.

Pollo Encacahuatado

Another traditional chicken dish is the Pollo Encacahuatado. Made with diced plum tomatoes, skinless chicken thights or chicken breasts, red chile, unsalted peanuts, garlic, diced onions and one can of chicken broth. It is best served with hot tortillas.

If you happened to be visiting Yucatan region, in Quintana Roo, you must try this popular traditional chicken dish. Either bitter orange or lemon juice and freshly squeezed orange juice are used in the making. Besides banana leaves is one of the unique ingredients. Mexican food is never without red chile and this particular dish, it marinates the chicken with orange juice, red chile paste, garlic, salt for minimum of 2 hours. This dish is infact very easy to make as it is baked in the oven and later on steamed for about 90 minutes on the top rack of the oven. It is finally and best served with fresh tomato, onion and chile.
